I don't know about you all, but I love pies! The fall and holiday seasons are all about pies at my house. For Thanksgiving instead of mashed potatoes we have vegetable pies. One of our favorites is a Spaghetti Squash Pie! A close runner up is the spinach pie. Both of these can be put in a crust or just in a glass pyrex baking dish.
Everyone does Thanksgiving differently. There is no right way to celebrate! Just the act of gathering around a warm meal is special. Taking time to be together and share in good spirits and gratitude is good for the soul. Adding in a vegetable pie good for the body!!
Both veggie pies are similar in method and makeup!
Spaghetti Squash Pie Recipe
- 2 cups of cooked spaghetti squash
- 1/2 cup of flour
- 1/2 cup of sugar or baking Splenda
- 1/2 teaspoon of vanilla extract
- 1/2 teaspoon of coconut extract
- 2 eggs or 6 egg whites
- 3/4 cup of evaporated skin milk
Preheat the oven to 350 degrees. Mix all ingredients (first excluding the spaghetti squash) in a blender and then slowly add the spaghetti squash. If you don't use the pie crust, spray bottom with butter spray. Cook at 350 degrees for 45 min to an hour. The knife should come out clear when ready. If you find yourself with a surplus of squash, throw it in a bowl and serve as an extra side dish at your table!
Spinach Pie Recipe
- 1 package of thawed frozen spinach
- 2 eggs
- 3 tbsp of flour
- 2 tbspmelted butter
- 1/4 cottage cheese
- 1/2 cup shredded cheese(you can use a blended shredded or any flavor you like. Usually cheddar)
- Mushrooms (optional)
Follow the same directions as the squash pie, listed above. When cooking for the holidays, I like to pour in a crust before baking the spinach composition, but it tastes great either way. So, traditions are great but with these dishes at my table, no one misses the potatoes!
